I made breakfast for dinner tonight, one of my favorite treats. Who doesn’t love syrup and bacon and pancakes at any time of day?! These pancakes didn’t take long to whip together. I added a step to this recipe, which was to add about 1/4 cup water to a small pan, pour in the chopped apples, and let them steam on medium heat over a low simmer for about 8-10 minutes. Then I let them cool for a few minutes and added them to the batter.

I used an organic Fuji apple and served the pancakes with organic Applegate Farms bacon. The pancakes came out very tasty and the apple added a slight crunch and sweeter flavoring. Next time though I would dice the apples smaller so the chunks weren’t so, well, chunky. Here are my pancakes: #tasteofhome #breakfast

Cinnamon Apple Pancakes
Recipe From: Taste of Home, 2013
Prep/Total Time: 25 min.
Yield: 6 pancakes
Ingredients
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 egg, lightly beaten
- 1 cup milk
- 1 tablespoon honey
- 1/2 tablespoon canola oil
- 1 medium apple, chopped
Directions
1. In a medium bowl, combine the flour, baking powder, cinnamon and salt.
2. Combine the eggs, milk, honey and oil; stir into dry ingredients just until moistened. Stir in apple.
3. Pour batter by 1/3 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until second side is golden brown.
