Everyday Cooking Adventure’s Smoked Salmon Sandwiches

I get very bored with my lunchtime meals. I put off lunch when I’m home until I’m completely hunger-filled, hoping each day that with my extreme hunger will come inspiration! Sadly, it usually doesn’t and I have my normal grilled cheese or perhaps something thrilling like a grilled cheese and soup. Blah. I came up with a new sandwich today though thanks to some leftover smoked salmon/lox that I had from  making breakfast bagels the other day. I served it alongside some deli pasta salad. I really liked this combination of ingredients but am always looking for more helpful inspiration if anyone has ideas to add to this concoction. Here’s my very yummy, healthy and filling smoked salmon sandwich:

Smoked Salmon Sandwiches

Ingredients:
  • 2 bread slices (wheat, white, whatever you please, or heck serve it on a croissant or roll!)
  • handful of sprouts, rinsed and dried
  • 1-2 Tbsp reduced fat cream cheese
  • 2 slices smoked salmon or lox (enough to cover the whole piece of bread)
  • 1/2″ thick slice of brie cheese (or a couple if needed in order to cover the whole piece of bread)
  • 4 thin rounds, cucumber
  • ground pepper, as desired
Directions:
 
1. Toast the bread lightly. If using a roll or croissant, warm in a 200ºF oven for a couple minutes instead of toaster.
2. Spread the cream cheese on one side of a bread slice. Top the other bread slice with the sprouts, smoked salmon, brie and cucumber. You can add ground pepper if you like as well.
3. Plop the two sides together, slice down the middle and enjoy!
