Everyday Cooking Adventures’ Royal Turkey Sandwich

This smorgasbord sandwich combines almost all the Thanksgiving leftovers have left in your fridge. I was a little doubtful that all these ingredients put together on bread would be appetizing, although I guess I love them all on my dinner plate Thanksgiving day. The gravy helps to keep the turkey moist when reheating it and if you don’t like mayo or mustard, just skip one or both.

This sandwich turns out to be so tasty! I ate it up in under 5 minutes and felt sufficiently stuffed (again!) afterwards. It has become a new post-Thanksgiving regular in the house!

Royal Turkey Sandwich

Makes 2 sandwiches
INGREDIENTS
  • 4 slices sandwich bread of your choice
  • 4 Tbsp. cranberry sauce, divided
  • 1/2 cup leftover stuffing
  • 1/3 cup gravy (if none leftover use jar or sauce packet to make new)
  • Turkey, sliced thickly (white or dark meat as preferred)
  • 2 Tbsp. Mayo, divided
  • 2 Tbsp. Mustard, divided
DIRECTIONS
1. In a saucepan, heat leftover gravy and turkey over medium heat about 5 minutes
2. While that is heating, reheat stuffing in oven at 375ºF for 10 minutes or in a microwave for 1 1/2 minutes or until heated through.
3. Toast bread and then top with mayo, mustard and cranberry sauce as desired.
4. Using a fork remove the turkey once heated through from the gravy and allow it to drip excess gravy off before placing on the bread.
5. Scoop stuffing on top. Slice in half and chow down! Feel free to serve alongside another Thanksgiving leftover such as potatoes instead of the typical potato chips.
