Everyday Cooking Adventures’ Prosciutto, Mozzarella, Spinach, & Fig Jam Panini

I received a panini press from the parents of close friends and it’s been such a fun appliance! Oprah loves her panini press and so do I. I’m obsessed with boring old grilled cheese sandwiches but sometimes I decide to be creative with my press. For lunch today, I came up with this delicious concoction. The mozzarella I used was shredded but mozzarella di bufala would probably be even better. I love the way the sweet fig jam complements the salty prosciutto. I really like this sandwich and I’m sure I’ll make it again. It is quick to make and a nice change to my normal lunchtime routines. Here’s my panini:

Everyday Cooking Adventures’ Prosciutto, Mozzarella, Spinach, & Fig Jam Panini

Serves 2.
Ingredients:
  • 4 slices bread
  • mozzarella cheese
  • spinach, rinsed thoroughly
  • fig jam
  • 4 slices prosciutto
  • butter spread, butter, or margarine
Directions:
 
1. Warm up the panini press (or frying pan if doing on the stovetop).
2. Butter one side of all 4 slices of bread.
3. On an un-buttered side, top with a spread of fig jam,sprinkle with mozzarella cheese, spinach (As much as desired), and 2 slices of prosciutto.
4. Top with the other un-buttered sides of  the two slices of bread.
5. Place on pre-heated panini press and let melt for 2-3 minutes. Gently raise press and check for nice dark lines and cheese is melted. Don’t cook it too long or it will burn on the bottom. If using a frying pan, cook 2-3 minutes on each side until browned on both sides. Enjoy!
