I love using my waffle maker because I find it easier than even making pancakes. You make the batter and just pour it right into the waffle iron, no flipping, no worrying about burning. I use Aunt Jemima pancake mix pretty often but sometimes I want to make breakfast a little more special. It is amazing how much you can actually taste the orange zest in the waffles. It is fragrant and tastes like little bits of orange and hidden inside each bite. The cinnamon and vanilla make the waffles sweeter too but only delicately. Altogether it is a great combination of flavors that you can boost your morning routine. Here are my orange waffles:
Orange Waffles

Serves: 2
Ingredients:
- 3 Tbsp. butter
- 1 1/2 cup flour
- 1 1/2 tsp. baking powder
- Pinch of salt
- 1 tsp. ground cinnamon
- 2 Tbsp. sugar
- 1 1/2 cup milk
- 2 eggs
- Zest of 1 orange, about 1 Tbsp.
- 1 tsp. vanilla
Directions
1. Preheat your waffle maker. Melt the butter in a small microwave safe bowl in the microwave, in 10 second intervals.
2. In a large bowl, combine flour, baking powder, salt, cinnamon and sugar. In a separate medium bowl, beat together milk, eggs, orange zest and vanilla Whisk the liquid into flour mixture until combined, don’t overmix.
3. Stir in the melted butter. If not a nonstick waffle maker, pour a little vegetable or canola oil on a paper towel and rub over the waffle iron (watch your fingers not to get burnt!). Spoon about 1/2 cup of batter onto iron and close to cook. Cook waffle until golden brown or waffle iron beeps on medium heat setting. Continue until you’ve used up all the batter. Serve with butter, powdered sugar, and/or maple syrup. Slice the orange into wedges and serve alongside.
