I am always in search of easy meals when I’m home alone at lunch or dinner. Sometimes I just want something quick but delicious, especially when I’m cooking for one. Lately, I’ve been buying packaged naan bread from the local grocery store. It is soft when fresh or crispy when baked and you can do practically anything with it. This is one recipe that makes a perfect meal for one person or can be doubled or tripled to make a very fast party food when people come over. Really any toppings of your choice or whatever is in the cupboard and refrigerator will do. Get creative and have fun!
Naan Pizza Bread

Serves: 1 as entree or 2-3 as an appetizer (triple, quadruple etc. recipe to serve a party)
Ingredients:
- 1 piece of flat, naan bread (available in most grocery stores in bread or artisan bread section)
- 3 Tbsp. pesto sauce
- 1/4 cup of gorgonzola crumbled
- 6 pieces of salami, thinly sliced
Directions:
1. Preheat oven to 350ºF. On top of a non-stick baking sheet put the naan bread down and use a knife or back of a spoon to spread the pesto sauce. Sprinkle with the gorgonzola cheese and salami.
2. Place on middle-rack of oven and bake for 5 minutes. Remove from oven, put aside the baking sheet and place the naan directly on the middle oven rack for 2 minutes to crisp the crust. Carefully remove and slice into strips. Serve immediately.
