I grew up eating this comfort food from my mom who got the recipe from her own mom. The topping sauce can be made to your own tastes she says and I like less mustard and more sugar for a great glaze as it bakes. I also don’t like to mix the onion into the meatloaf but sprinkle it a little on the top before adding topping so it too gets a bit glazed. This is a great dinner dish especially on a cold evening because its true stick to your ribs meal. I like it with mashed potatoes and green beans on the side. Very traditional! You will have a lot of leftovers if you’re just two people so I make meatloaf sandwiches for lunch afterward.
Mom’s Moist Meatloaf

Servings: 4 to 6
Prep Time: 10 min
Cook Time: 45 minutes-1 hour
Ingredients
1 pound lean ground beef
1/2 cup green peppers
1/2 cup onion (optional)
salt & pepper
1 egg
1/2 cup breadcrumbs fine
1 cup ketchup
1 tbsp brown sugar (or more to taste)
1 tbsp mustard (more or less to taste)
1 tbsp worcestershire sauce (optional)
Directions
1. Preheat oven to 350ºF. Grease a 5×9 loaf pan.
2. In a medium mixing bowl, combine beef, peppers, onions if using, egg, breadcrumbs, and salt & pepper. Shape into a loaf in the pan.
3. In a small mixing bowl, combine brown sugar, mustard, ketchup, and worcestershire.
4. Spread the sugar topping on the top and sides of the meatloaf.
5. Bake for 45 minutes-1 hour. Check for doneness…Meatloaf should be 160ºF in the middle.
6. Let the meatloaf rest for 5 minutes out of the oven then slice and serve.
FREEZE AHEAD: Let the meatloaf cool completely then wrap it tightly in foil. It will stay good in the freezer for two to three months.
