It’s 90ºF outside today even up here in the mountains–so I needed something to cool down. I found this Martha recipe saved on my Summer Pinterest board and knew I had to try it. I used a small seedless watermelon instead of a large one and just one cup of seltzer water. My mom and I made it together as she scooped out the watermelon and I blended it in batches. It was fast and simple-just two ingredients!

I loved serving it in the little hollowed out watermelon and it filled up 4 people’s tall glasses. I added ice cubes to cool it down even more. We all enjoyed it but I think straining it better and adding slices of peach or another fruit would have made it even better. I’ll definitely make it again but with these additions. Watermelon Punch & Bowl

Serves: 10
Ingredients
1 oblong seedless watermelon (about 14 pounds)
3 cups seltzer
Directions
1. Cut top third off watermelon; trim bottom just enough to make a flat surface. Scoop out flesh.
2. Working in batches, puree watermelon in a food processor. Strain through a fine sieve; discard solids. (You should have about 9 cups juice.)
3. Cover rind with plastic wrap. Refrigerate juice and rind until chilled, about 1 hour.
4. Combine juice with seltzer; transfer to rind.
