Everyday Cooking Adventures’ Caprese Kebab Appetizers

Recently for my friend Darcy’s bon voyage party I was looking for quick and healthy appetizers to serve. It was an afternoon picnic so finger food was necessary. Also, Darcy is very into healthy eating and body care so I couldn’t just serve chips and cookies (although I did have those on hand for the rest of us not-so-strong-willed people). I showed her a photo I had seen on Pinterest of these kabobs and she loved the idea!

They were obviously extremely easy to put together and I wasn’t so careful about using only the perfect size basil leaves. I doubled over larger ones as needed. I rolled the cheese in salt and pepper to add some flavor as well. You could serve this alongside some green goddess dip or just by themselves in a pretty vase as I did. They were fun, healthy, and easy to gobble down.

 

Caprese Kebab Appetizers

Recipe by: Everyday Cooking Adventures, 2015

Serves: 10 as an appetizer (about 2 each)

Total Time: 10 minutes

Ingredients:

  • 14 wooden or metal skewers
  • 14 fresh basil leaves, rinsed and dried
  • 14 bocconcini, small mozzarella balls
  • 14 cherry tomatoes, rinsed and dried
  • Salt and fresh ground black pepper

Directions:

  1. Roll the bocconcini once in a small plate of salt and fresh ground black pepper until lightly coated.
  2. Pierce the skewers with one basil leaf, 1 bocconcini, 1 tomato, and 1 more basil leaf. Repeat until all skewers are complete.
  3. Display in a pretty vase or sturdy-bottomed cups and serve. Keep covered with saran wrap in the refrigerator if not serving immediately. The basil can wither and brown if left out in the sun for very long though.
