Mother’s Day is tomorrow, just in case you have been living in a closet or glued to your computer for so long you don’t remember what month this is. I did have someone in Safeway yesterday ask me, “Is today Mother’s Day?!” while alarmingly perusing the flower and plant section. Luckily for him, there is still a little time to prepare for celebrating your mom. Today I’m sharing some of my favorite recipes that my mom made for me while growing up that I now enjoy making for myself. No matter how often I make something though it is never as good as mom makes, am I right?
Once I moved past things like creamed carrots and mushy bananas (the latter of which I now despise in any form), I was ready to start partaking in the three food category dinners that my mom made. She worked a full-time job and still somehow found the time to homemake a meal every night (or practically every night…I think there was an occasional pizza or Chinese take-out thrown in there). She always made sure we had the 3 food groups of meat, vegetables, and starch like potatoes or noodles.
I have always enjoyed my mom’s cooking, which is a lucky thing because growing up watching your mom cook makes a person grow up to want to cook. And my family embedded in me the belief that a family sitting around a table every evening sharing a meal, is a family that will make it through the ups and downs.
My mom has made some beautiful meals over the years, especially for the holidays, but here are some of my very favorite everyday recipes that I want to share with you. They are delicious, usually pretty hardy, and not too expensive to make. She’s made them for the three of us growing up and for friends visiting for holidays or birthdays…two other things my mom always finds time for. My mom will never forget your birthday, to send a thank you card for whatever she received from you, and to make sure her daughter is spoiled on every holiday. Thank you mom for all you do and have done for me the past 31 years! Prosciutto and Cheese Stuffed Chicken Breasts
Grandma’s Coffee Cake (Passed from my Grandmother Evelyn to my mom to me)

What lovely recollections of your mom. She sounds like a lovely, caring woman, and she provided a loving, warm atmosphere in which to grow up. Three cheers for Mom!
Thanks Adri! She definitely is all of those things!
