This is a reliable recipe that I’ve made half a dozen times in the past couple years. I am a huge avocado fan, so anything I can put it on sounds good to me. This dish looks colorful and the chicken gets a nice crispy skin from the fry pan but stays tender on the inside from the oven baking. The “salsa” is a nice sweet and cooling contrast to the spicier skin on the chicken. All in all, it is a lovely meal and I usually serve mine with Mexican or basmati rice and a green salad. Here’s my salsa chicken:

Chicken with Avocado Salsa

Ingredients:
- 1 tsp. chili powder
- 1 tsp. paprika
- 1/2 tsp. garlic powder
- 1/2 tsp. kosher salt
- 2 chicken breasts, leg with thigh quarters, or 4 chicken thighs or chicken tenders
- 1 Tbsp. olive oil
- 1 avocado, peeled and sliced
- 1/2 bell pepper, seeded and sliced
- 1 small tomato, diced
- 1/2 lime, juiced (can swap for lemon juice)
- 1/4 cup cilantro leaves, stems removed (could swap for parsley)
- Optional: 1 jalapeño, sliced
Directions:
1. Preheat oven to 425ºF. In a small bowl, mix the chili powder, paprika, garlic powder, and salt and rub allover chicken on both sides.
2. Heat olive oil in a large fry pan over medium heat. Add chicken to the pan and let brown for 4 minutes each side.
3. Place chicken on a small rimmed non-stick baking sheet and bake in oven on middle-rack for 15 minutes.
4. Meanwhile, combine the avocado, pepper, tomato, lime and cilantro (and jalapeño optionally) in a medium bowl. Let marinate together until chicken is done. Then plate chicken and pour mixture over top. Serve with rice and a green salad.
