Tonight I decided to turn my November Steak & Pepper Hero Sandwich recipe into a low-carb version–that means minus the bread! So how to make a sandwich without bread and make it filling enough for dinner? Well this recipe actually does it plus it’s really fast to throw together. The zucchini “noodles” only need to be cooked for one minute maximum or else they’ll get too gooey. I used chicken sausage instead of steak as the meat in the recipe. And the dish came out interesting to look at and appetizing to eat. We both left the dinner table full! Here’s my no-bread concoction:

Low-Carb Chicken-Artichoke Sausage with Zucchini Ribbons

INGREDIENTS
- 3 large sausage links of your choice (I used Aidell’s Artichoke Chicken Sausage)
- 1 medium size shallot
- 1 bell pepper
- 1 medium zucchini
- 1/2 cup sundried tomatoes (jarred or dried)
- 1/4 cup Italian dressing of your choice
- dash of soy sauce
- salt and pepper
