Everyday Cooking Adventures’ Chicken-Artichoke Sausage & Zucchini Ribbons

Tonight I decided to turn my November Steak & Pepper Hero Sandwich recipe into a low-carb version–that means minus the bread! So how to make a sandwich without bread and make it filling enough for dinner? Well this recipe actually does it plus it’s really fast to throw together. The zucchini “noodles” only need to be cooked for one minute maximum or else they’ll get too gooey. I used chicken sausage instead of steak as the meat in the recipe. And the dish came out interesting to look at and appetizing to eat. We both left the dinner table full! Here’s my no-bread concoction:

Low-Carb Chicken-Artichoke Sausage with Zucchini Ribbons

INGREDIENTS

  • 3 large sausage links of your choice (I used Aidell’s Artichoke Chicken Sausage)
  • 1 medium size shallot
  • 1 bell pepper
  • 1 medium zucchini
  • 1/2 cup sundried tomatoes (jarred or dried)
  • 1/4 cup Italian dressing of your choice
  • dash of soy sauce
  • salt and pepper
DIRECTIONS
1. Fill a medium size saucepan with water half-way and bring to a boil. Using a vegetable peeler, slice the zucchini into long, very thin slices and set aside.
2. Meanwhile, chop the sausage into 1/2″ thick rounds. Rough chop the bell pepper and shallot. If the sundried tomatoes are too large, slice in half.
3. Heat a saute pan to medium and add the shallot and sausage rounds and saute for 3 minutes. Add the Italian dressing, sundried tomato, bell pepper, and dash of soy sauce. Cook for another 3-5 minutes until the sausage is browned and the bell pepper softens.
4. Once the saucepan has come to a boil, add in the zucchini and then quickly remove with a sieve or fork after 1 minute max. You only want them to soften a little and any longer than this will make them mushy. Plate the zucchini. Add the vegetable/sausage mixture on top. Season with salt and pepper as desired–it may not need either! Serve right away.
