Beer Can Grilled Chicken

Okay, so this recipe may sound and look a little goofy but the resulting chicken is juicy, zesty, and tender and the skin actually gets crispy. It is also very simple. You can buy Emeril’s spice mix at the grocery store or make your own if you have the necessary ingredients sitting in your cupboard already. I couldn’t taste the beer in the chicken, so I think it just makes the chicken juicier and allows for the whole chicken to cook on the grill without sitting on the grates and burning up. This was a great recipe for Memorial Day weekend and would be perfect all summer long.

Beer Can Grilled Chicken

Hands-On Time: 5 minutes

Cook Time: 1 hour

Ingredients

  • 4 to 5 ounce whole chicken
  • Olive oil
  • Emeril’s Spice (see below for recipe)
  • 1/2 can of beer

Directions:

1. Heat the grill to 325ºF. Clean the chicken and thoroughly pat dry. Rub all over with olive oil and sprinkle lightly with Emeril’s Spice inside and outside.

2. Place a half-full can of beer into the cavity of the chicken so it sits upright. Place the can directly on the grill grates with the chicken standing up. See photo above.

3. Close grill and cook for about an hour or until chicken reaches 180ºF. (Be sure not to touch bone when taking the temperature.)

Emeril’s Spice

Combine all ingredients below. Makes about 1/2 cup.

  • 2 1/2 Tbsp. paprika
  • 2 Tbsp. salt
  • 2 Tbsp. garlic powder
  • 1 Tbsp. black pepper
  • 1 Tbsp. onion powder
  • 1 Tbsp. cayenne pepper
  • 1 Tbsp. oregano
  • 1 Tbsp. thyme
