BBC Good Food’s Triple Chocolate Muffins

Hooray, Everyday Cooking Adventures has over 100 Facebook friends now! To celebrate I made the Triple Orange Glazed Pork Chops and today I made these Triple Chocolate Muffins. Depending on if you’re a sweet or savory fan, one of these is bound to please.

This recipe came from the BBC so everything was on the metric scale, which meant doing some math (or maybe just using Google) to convert the measurements.

The muffins came out a little less brown and chocolatey looking than the BBC’s but they still came out wonderfully! They puffed up very nicely, made 12 full muffins, and tasted sweet and chocolatey. The prep was about 10 minutes so I’d say this was more like a 30 minute recipe from start to end. Here are my triple chocolate muffins: #BBC

Triple Chocolate Muffins

From: BBC Good Food

Total Time: 25 Minutes
Makes: a dozen regular muffins

Ingredients:

  • 2 Tbsp cocoa
  • 1 cup self rising flour (sifted)
  • 1 tsp baking powder
  • 1/3 cup dark brown sugar
  • 1 cup milk
  • 3 Tbsp melted butter
  • 2 eggs, beaten
  • 3 Tbsp dark chocolate chips
  • 3 Tbsp white chocolate chips
  • Cupcake liners

Directions:
1. Preheat the oven to 400ºF.  Sift the flour, cocoa, and baking powder into a bowl.
2. In a separate bowl add the brown sugar, butter, milk and eggs and mix well. Carefully fold in the dry mixture taking care to not over mix. Stir in the chocolate chips.
3. Spoon the mixture into paper muffin cases and bake for 16-18 minutes or until muffins have risen and are firm to touch. Test with a toothpick that they aren’t uncooked in the middle. Remove from the oven and cool for 5 minutes.
