One of my favorite things to do is make extra bacon at breakfast time and then keep the leftovers slices in a plastic resealable bag. This way I can crumble it on salads, add it to a BLT or put it into a sauce for chicken or steak. This week I used the leftover bacon to make a delicious and very fast sandwich on the panini maker. It was a great combination and you can really use any cheese you have in the fridge. It’s delicious and you don’t need to add any extra mayo or mustard because the brie because gooey enough. Enjoy!
Bacon, Brie, Arugula Panini
Recipe By: Everyday Cooking Adventures, 2014
Makes: 1 sandwich
Ingredients:
- 2 slices of bacon
- 2 slices of bread of choice
- Brie cheese
- Arugula, handful
Directions:
1. In a large fry pan place 2 slices of bacon. Heat over medium, flip once, and cook for 7 minutes until crispy. Dry on paper towel.
2. On one piece of bread, place two or three 1/4″ thick slices of cheese. Split the bacon slices in half and place on top of the cheese. Add the arugula. Top with the second slice of bread. Place on panini maker and cook until timer chimes on machine or about 4 minutes. Wait a couple minutes before slicing so cheese solidifies a little.
