Alton Brown’s Creamy Garlic Mashed Potatoes

I grew up eating mashed potatoes and I continue to serve them at home about once a week. They just seem to be the perfect side dish with meat and chicken and everybody likes them. Wanting to elevate my mashed potatoes to the next level I found this recipe that adds cream, garlic, and cheese…YUM! These potatoes come out extremely smooth and taste superb. I added a little sprinkle of fresh parsley and drizzle of olive oil to complete them. They would be perfect for the holidays but I’ve made them this way the past few times and can’t get enough on just your typical weekday. Enjoy!

Creamy Garlic Mashed Potatoes

Recipe from: Alton Brown, Food Network Specials, “All Star Thanksgiving”

Yield: 2 to 3 servings

Ingredients

  • 3/4  pound russet potatoes
  • 1/2 Tbsp. kosher salt
  • 4  fluid ounces (1/2 cup) half-and-half
  • 2 cloves garlic, crushed
  • 1 ounce grated Parmesan

Directions
1. Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.

2. Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.

3. Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.
