This recipe took my zucchini, potato, and bell pepper and put them together in a simple and splendid way. It was quick to prep and everything went on one baking pan in the oven. Prep time was really only 10 minutes and I baked it for just 45 minutes and then sprinkled a little Parmesan cheese on top for another 5 minutes.

It came sliding off the Silpat on the baking pan and was a colorful and very tasty dish. I love roasting a medley of veggies and this combination was wonderful. The garlic however was a little pungent so I might leave that off next time. I would never have thought of adding the breadcrumbs but they worked well to add slight crispiness to each piece. Zucchini and Potato Bake

Prep Time: 15 Minutes
Cook Time: 1 Hour
Servings: 2
INGREDIENTS:
- 1 medium zucchini, quartered and cut into large pieces
- 2 medium potatoes, peeled and cut into large chunks
- 1/2 medium red bell pepper, seeded and chopped
- 1 clove garlic, sliced
- 1/4 cup dry bread crumbs
- 2 TBSP olive oil
- paprika to taste
- salt to taste
- ground black pepper to taste
DIRECTIONS:
1.Preheat oven to 400ºF.
2.In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
3.Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.
