I made this tonight with some various things in the fridge I wanted to use up. You could definitely add a sauce if you wanted or some fresh or canned diced tomatoes. But I loved it just the way it was. It had most of the food groups: grain, meat, vegetable, dairy, and a little healthy fat in the form of olive oil. I love to make pasta whenever I have only one or two veggies left in the fridge and not much in the form of poultry or meat or fish. It’s so easy to just throw some odds and ends together and add pasta (I prefer the fresher Buitoni stuff than dry).

Chicken-Apple Sausage, Zucchini & Tortellini Pasta

Ingredients:
- Fresh or dry pasta
- 1 zucchini
- 1 chicken-apple sausage
- 3 slices prosciutto
- 1/2 cup parmesan cheese (or as desired)
- pinch red pepper flakes
- 1 tbsp Italian seasoning
- salt & pepper
- Olive Oil
1. In a medium saucepan heat water to boiling. Add a dash of salt and olive oil to the water once boiling. Add pasta and cook as package directs. For Buitoni tortellini about 5 minutes.
