Game Day Individual Seven-Layer Dips

Superbowl Sunday was yesterday and we went over to a friend’s home to watch the Big Game and chow down on some delicious buffet-style food. Her husband made delicious slow-cooker brisket and pork tenderloin and chocolate chip cookies from scratch, so I brought the side-dishes and appetizers. This appetizer was a crowd-pleaser as it was festive, individually-sized to avoid people worrying about other guests double-dipping, and delicious!

It was very simple to make since I bought already prepared guacamole, but you could make your own if you so desired. I left out the green-onion because I couldn’t find any at the grocery store this week but I think they weren’t really necessary and the woman at the party probably were happy not to have onion breath. Make sure you use a thick and chunky salsa or else the watery variety will ooze all your layers together. Individual Seven-Layer Dips

Yield: 8 cups (8 people)

Ingredients:

  • 1 (16 ounce) can refried beans
  • 1 (1 ounce) package taco seasoning
  • 1 cup guacamole
  • 1 (8 ounce) container sour cream
  • 1 cup chunky salsa or pico de gallo
  • 1 cup shredded cheddar or Mexican blend cheese
  • 2 Roma tomatoes, diced
  • 1/2 bunch of green onions, sliced
  • 1 (2.25 ounce) can of sliced olives, drained
  • 8 (9 ounce) plastic tumblers
  • tortilla chips

Directions:
1. In a small bowl mix taco seasoning with refried beans. Some people prefer to mix their taco seasoning with the sour cream layer but I wanted a bright white layer so I did it with the beans.

Here’s how the layers are assembled:
Layer 1: beans and taco seasoning; Layer 2: sour cream; Layer 3: guacamole; Layer 4: salsa or pico de gallo; Layer 5: cheese; Layer 6: tomatoes; Layer 7: green onions and olives

2. In each plastic glass, layer about 2 Tbsp. of the beans, followed by 2 Tbsp. of sour cream, 2 Tbsp. of guacamole, 2 Tbsp. of salsa, and 2 Tbsp. of cheese.

3. Then top with about 1-2 teaspoons of tomatoes, olives, and green onion. If making ahead of time, wait to add these toppings until shortly before serving.

4. Garnish with one tortilla chip. Store in the refrigerator until serving and serve with chips.
