Caviar is one of my secret indulgences maybe once a year. I absolutely love the briny, pop-in-your-mouth pleasure of caviar! This article is a great introductory course to caviar, written by BuyCaviar.eu. It is a great breakdown of the three main types of caviar.

Learn Before You Buy:
The number one misconception regarding caviar is that it’s too expensive and meant for millionaires. This is inaccurate. While it’s true that caviar is a level above many other food items in terms of price margins, there are varying price levels based on the type you want. The world’s highest quality caviar comes from the Caspian Sea near Russia. China and America also supply caviar to the world market but the flavor can differ from caviar that comes from the Caspian Sea. The taste of Chinese and American caviar is in some cases described as more briny.
To buy caviar in an online shop you do not need to spend a fortune. These come in 1 ounce packs for retail sales at high end markets or online. Price greatly varies depending on the type of caviar and size of eggs. Beluga caviar comes in blue tins whereas Osetra and Sevruga come in yellow and red tins respectively. When buying caviar, buy to match your requirement only.
Types of Caviar:
There are three types of caviar available in the world market today. Based on the type of sturgeon fish used to hatch the eggs, caviar is categorized into three types. Each type of caviar has its own unique characteristics such as size, taste and flavor. Prices also change accordingly.
- Beluga
The largest and the most expensive type of caviar in the world. The color ranges from gray to black. Beluga caviar is also very rare to find and thus the price increases over the other two kinds.
- Osetra
Osetra caviar ranges from yellowish gray to dark brown in color. Gold Osetra, also known as Royal Caviar is the rarest of this kind. Osetra caviar has a stronger flavor than Beluga caviar which makes it taste bolder.
- Sevruga
Sevruga is the smallest type of caviar in size. It haas a rather briny taste and is not as expensive as Beluga or Osetra. The color of the eggs range from medium gray to black. This is the most abundantly available type of caviar in the market.
