Missing the Italian food from my recent European vacation to Italy, I made this sandwich for lunch today. I love using my +Breville USA panini maker and since I had fresh focaccia bread, I decided to take my normal sandwich up a notch. I went with the Italian theme and did a caprese sandwich of tomato, basil, and cheese. This is a cheesy, savory sandwich and is also quite filling. I love experimenting with my panini maker and this one is a keeper. Happy Halloween everyone! Here’s my caprese panini:

Caprese & Salami Panini
Recipe By: Everyday Cooking Adventures, 2013
Makes 1 sandwich
Ingredients:
- 1/4 focaccia round
- 4 leaves fresh basil
- 2 slices fresh bufala mozzarella, sliced thinly
- 1/2 small tomato, thinly sliced
- 2 slices thinly sliced salami
- 1 Tbsp. mayo
- Freshly ground black pepper
Directions:
1. Heat panini maker or a grill pan on stovetop over medium-high heat. If using a grill pan, grease lightly with cooking spray or teaspoon of extra-virgin olive oil. Slice focaccia in half lengthwise. Layer basil, mozzarella, tomato, and salami on bottom slice of focaccia.
2. Place on panini maker or grill pan and top sandwich with other half of the bread. Close panini maker and let grill for 4 minutes or until browned and cheese softens. If using grill pan, flip after 4 minutes and let other side toast another 3 minutes or until browned.
3. Remove from heat, spread mayo thickly on one half of the focaccia and sprinkle with black pepper as desired. Replace top of sandwich and slice in half if desired. Enjoy!
